24 Blueberry Recipes

I know I’m so lucky to be able to get my hands on a variety of fruits and vegetables all year long, but there’s something to be said about enjoying them at the peak of their natural season. There’s really nothing quite like citrus fruits in the middle of winter, tomatoes at the end of summer, and fresh blueberries in the months of May, June, and July. 

These blueberry recipes showcase one of my favorite berries in a variety of different ways, from breakfasts to desserts. I make many of them when fresh blueberries are at their sweetest, but the nice thing is that I can make many of these recipes with frozen blueberries or wild blueberries, or throughout the year whenever I find that blueberries are on sale.

When I want to make blueberry muffins, I start with this recipe. In this baked oatmeal (a favorite of mine) the delicious flavor combination of lemon and blueberries for a healthy make-ahead breakfast that is easy enough for quick weekday breakfasts and fancy enough for serving overnight guests, at holidays, and for brunches.

Blueberry Coffee Cake

Ana is often making baked goods for church gatherings, so when a group of sweet ladies at her church asked if I had a good coffee cake recipe, she thought of this one right away. It’s a classic blueberry coffee cake with streusel topping, but has less added sugar, letting the natural sweetness of the blueberries shine through.

Lemon Blueberry Bread

I love a fast and easy quick bread recipe, and this one is always a favorite thanks to the winning flavor combination of fresh blueberries and lemon juice. It makes a loaf of bread that is bright and glorious, especially when topped with a simple lemon glaze. I serve it for breakfast when I have guests in town and it’s also great for a light summer dessert.

Easy Sheet Pan Blueberry Pancakes

If time doesn’t allow for making batch after batch of pancakes on the stovetop or griddle, this sheet pan pancake recipe is a genius solution. Make an entire pan full of one large pancake that can get cut into smaller servings and top each portion with favorite toppings, such as chocolate chips and blueberries or other fruit.

Blueberries are a natural addition to dessert recipes since they’re low acidity and low pectin (a type of fiber), which allows them to create a naturally sweet sauce that works well in pies and cobblers. Enjoy fresh blueberries in these crowd-pleasing desserts.

This fresh blueberry cobbler is a dessert recipe that brings the Wow factor, but it’s also so simple and quick to prepare. Made with sweet buttermilk-like biscuits for the topping, it’s a dessert that I enjoy year-round, but especially in the summer with a scoop of vanilla ice cream and when fresh blueberries are at their peak.

Frozen Smoothie Packs

Inspired by the Daily Harvest freezer smoothies, Stacie and I created these delicious freezer smoothie packs that can be made ahead of time and stored in the freezer. I always add some blueberries into mine. When it’s time to make a smoothie, just add the frozen contents of the packs to a blender along with yogurt, milk, or other liquid. Then blend and enjoy a smoothie that can be made in less than a minute.

Banana Berry Smoothie

I keep frozen blueberries on hand just so I can make this delicious berry smoothie for my kids in the summer. In addition to the berries, it features other nutritious ingredients like avocado, spinach, nut butter, chia seeds, banana, and collagen giving it a well balanced amount of protein, carbohydrates, and healthy fats.

Frequently Asked Questions

Can I use frozen blueberries in these recipes?

Many of these recipes can be made with either fresh or frozen blueberries, as noted in the recipe card. Some recipes, however, benefit from using fresh blueberries only, in cases where thawed frozen blueberries may create too much moisture or sogginess. 

How long do fresh blueberries last?

When stored properly (unwashed in either their original container or over a paper towel in 
an open-air container in the refrigerator), fresh blueberries will last up to 10 days. Wash the blueberries just before eating or using in a recipe. For the longest storage, wash, dry, and freeze blueberries in a freezer-safe airtight container.

Can people with type 2 diabetes eat blueberries?

Yes, blueberries – and any fruit or berry – can be part of a healthful diabetic diet. Like all foods, eat blueberries as part of a meal plan that includes a variety of different food groups, and in a reasonable portion (~½ cup or less) at one time.

What can I make with a lot of blueberries?

To use a lot of blueberries in one recipe, consider recipes like blueberry cobbler, which calls for 5 cups of fresh blueberries. Other options that tend to call for 2-4 cups of blueberries are blueberry pie, blueberry crisp, and blueberry buckle recipes.
