When I eat a Paleo, whole30 or low-carb breakfast, lunch or dinner, there usually nothing to eat with it. I had keto kale & chives egg muffin for breakfast -2 and water, is there anything I can eat without messing up my keto eating.

We are definitely not keto experts and since your tolerance of carbs (and protein) are very individual to you we can only offer suggestions as to what might work.
Typically, low carb veggies like broccoli, cauliflower, Brussels sprouts, green beans, mushrooms, cabbage, and bok choy are popular with keto eaters.
I must try the smashed avo and salmon one! I am trying to incorporate more salmon into my diet. These are great ideas. Currently my fave is a fried egg on top of smashed avo with TJ’s Everything But the Bagel Seasoning (seriously, it’s magical!). Thanks for the inspiration!
