Are you in search of an oh so easy & delicious weeknight dinner? Then this Whole30-friendly One-Pan Kielbasa Veggie Bake is a must try.
One pan, a knife, a cutting board, a few ingredients and yourself is all you need to make this recipe.
Maybe some tunes, too…because chopping and cooking is more fun with music (side note: current favorite station on Pandora is Trampled By Turtles Radio). The best part of one-pan recipes is that it results in a quick kitchen clean up. The fewer the dishes the better and the more time you’ll have to spend doing the things you love like going for a walk, reading a book or taking a bath (or doing the things that must get done…clean, help kids with homework, make lunches for the next day….). However you spend that extra time, know that it won’t be spent doing dishes! #winning
And if you’re looking for a new knife, I recently received Heckels International Chef Knife as a gift and LOVE it! Highly recommend it.
Healthy fats, protein and veggies = complete meal!
I consider a complete meal one that contains plenty of healthy fats from the avocado oil, a quality source of protein and mostly veggies. One-pan Kielbasa Veggie Bake has everything you need. No need to add any extra sides unless you want to up your intake of veggies and serve it over a bed of lightly sautéed greens or cauliflower rice.

One-Pan Kielbasa Veggie Bake is full of flavor and makes for great next day leftovers or scrambled egg additions.
So much flavor in this dish thanks to the Kielbasa, a polish sausage that’s seasoned with garlic and other spices. My hubby doesn’t typically go for all the veggies but if it includes sausage (or bacon) there’s a good chance he’ll eat it and enjoy it. This recipe is a winner and one he even requests from time to time. Let me repeat that, this recipe is a winner and one he (who is quite picky) requests from time to time! Now if you aren’t able to get your hands on some Kielbasa, feel free to use any sausage of your choice. I just recommend one that’s made with quality and real food ingredients (suggested brands – Applegate, Aidells, Pedersons, Garrett Valley).
If you have leftovers, I recommend you add them to an egg scramble or an omelet. So good!
Prefer a lower carb version? No problem!

- Combine all of the ingredients on a sheet pan lined with parchment. Toss with oil, season with salt and pepper.

Tip: If using turkey Kielbasa, you may want to wait 10 minutes into the baking time before adding to prevent it from drying out.

This was so good! 😋. perfect for chilly fall days. Didnt use green beans because mine went bad before I could use them. But used all of the recommended ingredients. You could definitely dress this up by seasoning your vegetables with whatever seasoning you want or even adding herbs like parsely. Definitely flavorful on its own. One tip, if you cut your potatoes on the thicker side, place them on their own in the oven first and then when they are halfway done add the rest of the veggies and meat to the pan.

That’s a great tip. Thank you for sharing and leaving a start rating and review!

These ingredients don’t cook correctly all together, the potatoes were still hard when everything else was ready.
Jessie Shafer says
Cutting the potatoes into smaller cubes as shown in the photos would make it so everything comes out cooked and done at the same time.
