Being a dill pickle-holic, I had to make this and did so yesterday. It’s absolutely fantastic and came together in no time at all. I didn’t measure anything out, but rather grabbed the leftover produce kicking around in my fridge, threw it all in my food processor, and dinner was done…very heavy on the pickles. I didn’t have any dill on hand, and it was still good, but will use it next time. I anxiously ate it right from the bowl, but will also stuff it in wraps or lettuce cups. Very budget-friendly and will be on rotation all summer. I can easily see this as the perfect dish for any summer gathering.
