Teff flour has become one of my favorite baking ingredients because it adds so much more than nutrition alone. It has a naturally mild, slightly sweet, nutty flavor that blends well with warm spices like cinnamon and complements baked apples without overpowering them. It also contributes to the tender texture of this apple crumb cake.
Maskal Teff Organic Ivory Teff Flour is my go-to because its light color keeps the cake beautifully golden while still delivering the wholesome nutrition (more fiber, protein, and iron) that teff is known for. How This Apple Coffee Cake Comes Together
This recipe comes together in just a few simple steps.
- Mix the batter: After whisking together the dry ingredients, I stir in the wet ingredients (the yogurt, eggs, oil, milk, and vanilla) until a smooth batter forms. A stand mixer with a paddle attachment can be used to mix the batter, but I find that it’s easy enough to just mix everything by hand with a rubber spatula. The diced cinnamon apples get gently folded in before everything is spread evenly into the prepared baking dish.
- Make the streusel topping: The crumble topping comes together separately by cutting cold butter into the flour, teff flour, brown sugar, and cinnamon until coarse crumbs form. Using cold butter is important because it creates those crisp, buttery pockets that make a great crumble topping. Once sprinkled over the batter, the cake bakes until the top is golden and a toothpick inserted into the center comes out clean. Add finely chopped walnuts or pecans to the crumble topping, if desired.
- Let it cool: After baking, patience pays off. Allowing the cake to cool before adding the optional icing keeps the drizzle defined instead of melting right into the warm cake.

Dice The Apples Small
One of the details that makes this recipe work so well is peeling the apples and cutting them into evenly sized, roughly ¼-inch pieces. Smaller pieces distribute throughout the batter more evenly, helping every bite get plenty of apple flavor without creating heavy pockets that can sink while baking. Uniform pieces also soften at the same rate, giving the finished cake a consistent texture.

Make It Gluten Free
This recipe adapts well for a gluten-free coffee cake. Replace the all-purpose flour in both the cake and crumble topping with an equal amount of 1:1 gluten-free baking flour. The Maskal Teff Organic Ivory Teff Flour remains the same since it is naturally gluten free.
After testing this version, I found the cake baked up incredibly moist without becoming gummy, and it maintained a nice tender texture.
Make It Dairy Free
To make this coffee cake dairy-free, use a few plant-based swaps in each part of the coffee cake. Plain dairy-free yogurt (I like Silk almondmilk yogurt) works well in place of the Greek yogurt. And plant-based stick butter works great in the crumble topping. Then, use plant-based milk (soy milk or almond milk are what I use) in place of the dairy whole milk in the batter and the icing.

A Cozy Addition To Breakfast Or Brunch
This is the kind of cake I love to serve throughout apple season. A square piece pairs perfectly with a hot cup of coffee, chai tea, or cinnamon-spiced latte for breakfast or brunch. It also makes a cozy addition to holiday mornings, entertaining weekends, or afternoons after a trip to the apple orchard.
I serve it at room temperature, though a slightly warmed piece feels especially comforting on cooler days. The optional vanilla icing adds a sweet finishing touch that makes the cake feel just a little more special.

Store And Enjoy Later
Leftover pieces of this coffee cake store at room temperature for up to 2 days in an airtight container. Or store it in the refrigerator for up to 5 days. Gently warm individual slices in the microwave for about 15 to 20 seconds before serving.
For longer storage, wrap individual pieces tightly and freeze them for up to 3 months. Thaw overnight in the refrigerator or at room temperature before warming slightly for the best texture.

Apple Coffee Cake Recipe
This cozy apple coffee cake combines tender fresh apples, a cinnamon-spiced cake batter, and a buttery crumb topping for the perfect fall treat. It is equally delicious served for breakfast, brunch, as an afternoon snack, or even for a simple dessert.
Ingredients
For the Cake:
- 1 cup all-purpose flour (136 g)
- ½ cup Maskal Teff Organic Ivory Teff Flour (77g)
- ¾ cup granulated sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon fine salt
- 1 cup plain Greek yogurt
- 2 large eggs
- ¼ cup avocado oil
- 2 tablespoons milk of choice
- 1 teaspoon pure vanilla extract
- 2 medium apples, peeled and diced into ~ ¼-inch pieces (2½ cups)
For the Crumble Topping:
- 2 tablespoons all-purpose flour
- 2 tablespoons Maskal Teff Organic Ivory Teff Flour
- ¼ cup light brown sugar
- 1 teaspoon ground cinnamon
- 3 tablespoons cold butter, cubed
For the Icing Drizzle (optional):
- ¼ cup powdered sugar
- 1 teaspoon milk of choice
- ½ teaspoon pure vanilla extract
Instructions
- Preheat the oven to 350°F. Mist a 9×9 baking dish with cooking spray or line it with parchment paper; set aside.
- In a medium mixing bowl, whisk together the 1 cup flour, ½ cup teff flour, granulated sugar, cinnamon, baking powder, baking soda, and salt.
- Add the yogurt, eggs, oil, milk, and vanilla; stir until combined.
- Fold in the diced apples. Then transfer the batter to the prepared baking dish, smoothing the top of the batter with a spatula.
- Make the crumble topping: To a small bowl, add the 2 tablespoons flour, 2 tablespoons teff flour, brown sugar, cinnamon, and cubed butter. Using a pastry blender or fork, blend and mash the mixture until coarse crumbs form.
- Sprinkle the crumble topping evenly over top of the batter. Then bake the coffee cake in the preheated oven until a toothpick inserted in the center comes out clean, 35-39 minutes.
- Remove the coffee cake from the oven and let cool before adding the (optional) icing drizzle.
- To make the drizzle: In a small bowl, whisk together the powdered sugar, milk, and vanilla. Drizzle the icing over the cooled cake, then cut into 9 pieces and serve.
