This cozy apple coffee cake combines tender fresh apples, a cinnamon-spiced cake batter, and a buttery crumb topping for the perfect fall treat. It is equally delicious served for breakfast, brunch, as an afternoon snack, or even for a simple dessert.

Ingredients

For the Cake:

  • 1 cup all-purpose flour (136 g)
  • ½ cup Maskal Teff Organic Ivory Teff Flour (77g)
  • ¾ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine salt
  • 1 cup plain Greek yogurt
  • 2 large eggs
  • ¼ cup avocado oil
  • 2 tablespoons milk of choice
  • 1 teaspoon pure vanilla extract
  • 2 medium apples, peeled and diced into ~ ¼-inch pieces (2½ cups)

  • ¼ cup powdered sugar
  • 1 teaspoon milk of choice
  • ½ teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F. Mist a 9×9 baking dish with cooking spray or line it with parchment paper; set aside. 
  2. In a medium mixing bowl, whisk together the 1 cup flour, ½ cup teff flour, granulated sugar, cinnamon, baking powder, baking soda, and salt.
  3. Add the yogurt, eggs, oil, milk, and vanilla; stir until combined.
  4. Fold in the diced apples. Then transfer the batter to the prepared baking dish, smoothing the top of the batter with a spatula.
  5. Make the crumble topping: To a small bowl, add the 2 tablespoons flour, 2 tablespoons teff flour, brown sugar, cinnamon, and cubed butter. Using a pastry blender or fork, blend and mash the mixture until coarse crumbs form.
  6. Sprinkle the crumble topping evenly over top of the batter. Then bake the coffee cake in the preheated oven until a toothpick inserted in the center comes out clean, 35-39 minutes.
  7. Remove the coffee cake from the oven and let cool before adding the (optional) icing drizzle.
  8. To make the drizzle: In a small bowl, whisk together the powdered sugar, milk, and vanilla. Drizzle the icing over the cooled cake, then cut into 9 pieces and serve.

Notes

For gluten free, use equal amounts of 1:1 gluten-free baking flour in place of the all-purpose flour in the coffee cake and the crumble topping. The Maskal Teff Organic Ivory Teff Flour is naturally gluten free.  

For dairy free, use a plant-based yogurt, such as almond milk yogurt, and plant-based milk in the coffee cake. Use a plant-based stick butter and plant-based milk in the crumble topping. And use plant-based milk in the icing.
