Strawberry Banana N’ice Cream
This cool summertime treat requires just 4 ingredients that you may already have on hand – and it requires no additional sweeteners! A high-powered blender works best for this recipe though you can use a food processor if that’s what you’ve got.
Ingredients
- 3 bananas, cut into chunks and frozen
- 12-ounce bag of frozen strawberries, about 2 ¼ cups
- 1 tsp. vanilla
- ½ cup unsweetened almond, cashew or coconut milk (plus more as needed to achieve desired consistency)
- 4 scoops Vital Proteins Collagen Peptides (optional ingredient – omit for vegan-friendly)
Instructions
- Place all ingredients in high-powered blender or bowl of a food processor. Blend/process until smooth, stopping to scrape down the sides and adding additional milk as needed.
- Serve immediately.

Freezing instructions: Scoop individual servings onto a sheet pan lined with parchment paper. You’ll end up with 4-6 mounds of ice cream. Quickly place in freezer. Once frozen, store in a zip top bag or airtight container in the freezer. When ready to enjoy, remove a portion from the freezer and let thaw slightly until soft and creamy.

Without thinking I dumped everything in my Vitamix only to realize that the frozen banana and frozen strawberry became cemented together by the almond milk that I poured over them. It took me 15 min to break apart the frozen solid glob. Next time I’ll put the milk in, then drop in the frozen fruit a couple pieces at a time to see if that avoid the frozen-fruit-cement=block!

This tastes amazing and I can’t believe I didn’t try it sooner! We are trying nice cream as a non dairy dessert for my 6 year old ice cream loving son who might have a dairy allergy. He loved it! And I can eat a serving as a 0 point ww dessert. Win win!
