Yes, that’s right, this meal takes just 30 minutes.
I’m a big fan of 30 minutes meals and so is my blogging bestie, Lindsey over at Nourish Move Love! And I’m guessing you are too!
A few weeks ago, Lindsey and I got together to work on a project {coming your way soon} and we landed on the topic of our love for quick and tasty and of course healthy meals. Neither one of us have a whole lot of time to spend cookin’ away during the week, so we tend to stick our go-to recipes. This conversation inspired us to start a 30 Minute Meal series! We want to share our go-to recipes with you so that you can spend less time in the kitchen and more time doing what you love, all while eating healthy and nourishing foods.
Seriously, every time Lindsey and I get together we seem to always add another project to our plates…but it’s what we love to do!

Lemon Chicken with Capers & Garlic Roasted Vegetables. The first meal of our 30 Minute Meal series!
This recipe I’m sharing today is one of my weekly go-to’s. I usually double this recipe because…well….I like veggies! Garlic Roasted Vegetables make for a perfect side-dish to really any meal. Leftovers taste delish with fried eggs, in omelets, reheated {or cold} or served on top of a salad. Pair this with Lindsey’s, one-pan Lemon Chicken with Capers to create not only a simple meal, but a ridiculously kick-ass tasty one too.
In addition this meal is perfectly balanced with an adequate source of protein, carbs and fats, and both recipes are whole 30-friendly, gluten-free, grain-free, dairy-free and egg-free.
Prep the Garlic Roasted Vegetables first and then make the Lemon Chicken.
Having the veggies pre-chopped is ideal but if not, no worries. It may just take slightly more than 30 minutes to make this meal. In order for the meal to come together at the same time, I recommend getting the veggies in the oven and then move onto the chicken.
Feel free to use what you have on hand.
Change up the Garlic Roasted Vegetables with what you have on hand or by substituting your favorite veggies. Keep in mind that heartier veggies, such as beets, sweet potatoes, broccoli, cauliflower, winter squash, and turnips work best with this recipe. Softer veggies, such as zucchini or mushrooms, may turn kind of mushy. Also, if you wish, go ahead and add dried or fresh herbs to this recipe such as basil, oregano, rosemary or thyme. My favorite is rosemary!

Garlic Roasted Vegetables
With just a few ingredient you’ll have yourself the perfect and most delicious vegetable side dish. Change it up by substituting your favorite veggies keeping in mind that heartier vegetables, such as beets, sweet potatoes, turnips, work best with this recipe. Recommend serving with Lemon Chicken, a recipe by nourish move love.
Ingredients
- 2 handfuls (~8-10 oz.) of green beans, trimmed and washed
- 3 medium carrots, peeled and cut into 2–3 inch. sticks
- 2 medium parsnips, peeled and cut into 2–3 inch. sticks
- 1 cup Brussels sprouts, halved
- 3 cloves garlic, minced
- 2 Tbsp. olive oil or avocado oil
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
- Fresh or dried herbs of choice, optional
Instructions
- Preheat oven to 375 degrees. Line baking sheet pan with parchment paper if you wish.
- In a large bowl or directly on the pan, toss all of the ingredients together.
- Roast in oven for 18-20 minutes.
