We took the classic granola bar and traditional campfire s’more and mashed them together for an elevated granola bar everyone will love. Speckled with chocolate chips, gooey marshmallows, and graham crackers, these Chewy S’mores Granola Bars are perfect for snack time – campfire optional.

We certainly do! These chewy s’mores granola bars conjure up sweet childhood memories of camping under the stars and sleep away camp. Now you can recreate one of the most magical flavors of those warm summer nights any day of the week and in any weather. No campfire, bug bites, artificial flavors, colors, or preservatives required.
Ingredients for S’mores Granola Bars
- Rolled oats – use old-fashioned rolled oats. Gluten-free if needed
- Gluten-free 1:1 flour – We recommend Bob’s Red Mill 1:1 Gluten-Free Flour or King Arthur Measure for Measure Gluten-Free Flour. Substitute all-purpose flour if you don’t need these to be gluten-free
- Crispy rice cereal – For gluten-free, look for a cereal that’s certified gluten-free (such as this brown rice crisp cereal)
- Flax meal – Otherwise known as ‘ground flax seed’
- Baking powder – Be sure to use baking powder and not baking soda.
- Fine salt
- Melted butter – Use vegan butter or coconut oil for dairy-free
- Honey – Use brown rice syrup for a vegan option
- Mashed banana – For best results, use a ripe yellow banana without spots (not the kind you’d use for these Banana Chocolate Chip Muffins)
- Pure vanilla extract
- Graham crackers – Use gluten-free, if needed (these are hands-down our favorite gluten-free graham crackers)
- Mini marshmallows – For vegan, use Dandy Mini Marshmallows. They won’t melt quite as well as regular marshmallows made with gelatin but they’re a delicious and easy swap along with brown rice syrup for making these 100% plant-based. Avoid using dehydrated marshmallows or marshmallow bits, you want that ooey-gooey factor to help hold the bars together.
- Mini chocolate chips – For dairy-free and/or vegan, we recommend Enjoy Life! mini semisweet chocolate chips
How to make S’mores Granola Bars
Homemade granola bars are easy to make and taste great.
- Preheat oven to 350℉. Line an 8×8-inch baking dish with parchment paper and set aside.
- In a medium bowl, combine the oats, flour, cereal, flax meal, baking powder, and salt.
- Make a well in the center of the dry ingredients. Add the melted butter, honey, banana, and vanilla. Stir to combine.
- Fold in the graham cookie pieces, marshmallows, and chocolate chips.
- Transfer to the prepared baking pan. Using a spatula or small piece of parchment paper, firmly press the mixture into the pan.
- Bake on the middle rack of the preheated oven for 18-20 minutes or until bars are puffed and set in the center and lightly golden brown.
- Remove from the oven to a wire rack. Allow to cool completely (about 1 hour) before slicing into 9 bars.
Are Chewy S’mores Granola Bars Healthy?
Like most granola bars, these smores granola bars are on the sweeter side and perhaps better suited for a dessert than a snack if cut into only 9 squares. We did, however, reduce the amount of total added sugars and refined sugars by using honey and ripe banana instead of brown sugar, corn syrup, or molasses that you might find in similar granola bars or s’mores-inspired treats.

How Do I Store These S’mores Granola Bars?
We recommend storing any leftover smores granola bars in an airtight container in the refrigerator for up to 4 days.
Can You Freeze S’mores Bars?
Yes, you can. These granola bars freeze really well. Just cut into squares and place on a plate or small parchment-lined baking sheet and place in the freezer for several hours. Once frozen, transfer to a freezer-safe container and store for up to 3 months.
How do you get granola bars to stick together?
The key is to press the oat mixture really firmly into the baking pan. A lightly oiled spatula or a piece of parchment paper or waxed paper works well for pressing the bars into the pan without everything sticking to your fingers.
How many calories are in a Chewy s’mores granola bar?
These granola bars, when cut into 9 squares like the photos above, weigh in at 260 calories per bar. - ⅓ cup mashed banana (1 medium ripe banana, yellow not black) or applesauce
- 1 teaspoon pure vanilla extract
- 1 ounce graham crackers of choice (2 full sheets for Honey Maid or equivalent, 2 squares for Pamela’s Gluten-Free), broken into pea-sized pieces
- ½ cup mini marshmallows
- ¼ cup mini chocolate chips

These are tasty and easy to prepare- a softer granola bar that holds together. The banana flavor comes through, and I like that there is no refined sugar (I didn’t have marshmallows and therefore left them out). Will make again!

These granola bars were easy to make and so delicious! My 6yo devoured one and said “these are much better than store ones!” I cut them into the same size as the granola bars we get at the store. What’s the best way to store them? Could I freeze them if I made a big batch? This first batch won’t last long enough to freeze haha!
