Tips From Dietitian Jessie
Registered Dietitian Jessie developed this recipe in her own kitchen and has these tips to share:
- To get a nice crispy topping on the tater tots and cheese, place the baked casserole under the oven broiler (on High) for 1-2 minutes.
- If your mornings are hectic or you want to make a special morning easier on yourself, take advantage of the Overnight Casserole option where you can prep the casserole the day/evening before and then simply bake it in the morning (see Notes section of the recipe card for instructions).
- During my testing, I enjoyed topping servings of this breakfast casserole with a dollop of sour cream and a few drops of hot sauce. It was also delicious with avocado slices and a sprinkle of green onions on top.
- This warm and hearty casserole would pair nicely with fresh fruit or even a very lightly dressed green salad, which is more of a French style breakfast.
Frequently Asked Questions
Yes, after the casserole has been fully baked and cooled, you can store the casserole in a freezer safe container for up to 3 months. Allow the casserole to fully thaw in the refrigerator for 1 to 2 days before reheating in a 400-degree oven for 15-20 minutes.
Alternatively, you can freeze individual portions of the casserole in freezer-safe bags or Souper Cubes 1-cup portions. Thaw portions in the refrigerator overnight and then reheat in a microwave or toaster oven for 2 minutes
Yes, you can substitute the frozen tater tots with a 1-lb bag of frozen hash browns. Stir them into the casserole ingredients in Step 4, still frozen.
Breakfast sausage is a type of fresh bulk sausage, typically made from ground pork and seasoned with sage, fennel, and/or thyme, as well as garlic powder, onion powder, and cayenne pepper. It is sometimes sweetened with maple syrup.
No, we’ve tested the overnight option and the tater tots hold their shape well and then bake nice and crispy, even when the casserole is assembled one day ahead of time.
Reheat leftovers in a microwave or toaster oven for 1-2 minutes.
We found the easiest method was more of a mix-and-pour method vs a layering method. In this recipe for Tater Tot Breakfast Casserole, we combined the cooked sausage, veggies, tater tots, bacon, and cheese in the baking dish, and then pour the egg-milk mixture all over and around the ingredients. Finally, we topped the casserole with more cheese and bacon before baking.

I’ve made this easily a dozen times- a great meal prep breakfast with room to adjust based on what you have in your fridge and pantry. I add a little cottage cheese for extra protein and it’s always a hit! ⭐️⭐️⭐️⭐️⭐️
Great! Thanks for the great feedback and 5-star review!
Made this for our first meal in 2025 and my goodness if my year is as amazing as this tested, then I will be so pleased!!!! Absolutely delicious, so much flavor, and very easy to make!
Thank you so much for the great feedback, Anna! We appreciate the 5-star review.
I did add more cheese than what’s called for. I used 4 cheese Mexican blend by Sargento and also added about 3/4 c parm to the topping. I didn’t use the broiler at the end but the crust still had some crunch especially at the edges and I believe it’s because of the added Parmesan. And oh, I used sweet potato tots instead, fam preference, and it turned out awesome!!
Thanks for the 5-star review, Helen!
Love this casserole! The OG recipe is a little potato and cheese heavy for us personally, so we do use less and skip the bacon but it’s so easy to adjust! Definitely a staple in our house.
Awesome, Millie!
Delicious 😋 I used a mixture of sharp and extra sharp cheddar cheese. Will make again!
Awesome Edna!
