Fun Facts about Stacie
Why did you become a dietitian?
I always had a passion for cooking and baking, which was sparked by both of my grandmothers at a young age. They instilled the foodie in me (in a Midwest kind of way). I remember getting together with my Grandma Verna to look through the newest Taste of Home magazine and choosing a couple of recipes to try from each issue. I always looked forward to that time with her!
My involvement in athletics is what spurred my interest in healthy cooking, specifically. As young as a junior in high school, I knew I wanted to go to a college where I could major in Dietetics and Nutrition, which is exactly what I did.
What was your first job?
Aside from mowing a couple of neighbors' lawns, which I did in grade school, my first official job was working as an assistant cook at a local restaurant a couple blocks away from where I lived.
Where did you grow up?
I was born and raised in the small town of Blue Earth, Minnesota.
What’s your favorite food?
Why is this question so hard to answer!? I’m going to have to go with Sweet Potato Fries dipped in Chipotle-Lime Aioli.
Do you have any pets?
I sure do! Lucy, my spicy and sassy goldendoodle who may not ever grow out of the ‘zoomies’. And Putz, my cat, is one-of-a-kind sweetie.
What do you do for fitness?
I played volleyball in college so I’ve always been very active and interested in fitness. After college I was an avid runner and also enjoyed a mix of CrossFit and Yoga. In this current season of life as a busy mom, I enjoy country walks around my home, short and effective at-home workouts (my favorites being from my dear friend, Lindsey of Nourish Move Love), and occasional visits to a pilates studio.
I try not to overthink and over complicate fitness but rather live by the goal to move my body in some way, every day.
What do you do for fun?
The things that bring me the most joy are the simple things in my life. Like a good coffee or a walk with a friend, going to a farmers market, a simple family outing, sitting around a bonfire, and a slow weekend at home. A trip to my cabin in northern Minnesota complete with family, time fishing, swimming, and ample time in the great outdoors is always good for my soul. I’m all for the simple living.
