Fun Facts about Stacie
Why did you become a dietitian?
I always had a passion for cooking and baking which was sparked by both of my Grandmothers at a young age. They instilled the foodie in me (in a Midwest kind of way)! I remember my Grandma Verna and I getting together and looking through the newest Taste of Home magazine and choosing a couple of recipes to try. I always looked forward to that time with her! From there, my involvement in athletics is where I developed an interest for healthy cooking, specifically. As a Junior in High School I knew that I wanted to go to school to major in Dietetics and Nutrition so here I am today. I have worked in several settings as a Dietitian including an ICU, Dialysis, Food Service, Clinic, HyVee and Lifetime Fitness.
What was your first job?
Aside from mowing a couple of neighbors' lawns which I started in grade school, my first official job was working as an assistant cook at a local restaurant which was just a couple blocks away from where I lived. This is the job that kindled my love for patty melts (and now I want a patty melt).
Where did you grow up?
I was born and raised in the small town of Blue Earth, Minnesota. About 20 miles away from where I live now. I attended Blue Earth Area High School. Go Bucs!
What’s your favorite food?
Why is this question so hard to answer!? I’m going to have to go with Sweet Potato Fries with a Chipotle-Lime Aioli.
Do you have any pets?
I sure do! Lucy Lou, my spicy and sassy goldendoodle who may not ever grow out of the ‘zoomies’ (you know the butt down thing where they zoom around totally out of control usually in a big circle). Then there is Walter, my gentle, edlerly chocolate lab who is my rule follower. And I can’t forget about Putz, my cat! She is one of a kind and such a sweetie.
What do you do for fitness?
I played volleyball in college so I’ve always been very active and interested in fitness. For any of you volleyball players, I was the libero! After college and before having two babies in less than two years I was an avid runner and also enjoyed a mix of CrossFit and Yoga. In this current season of life as a busy mom, I enjoy country walks around my home, and short and effective at-home workouts with my favorites being from my dear friend, Lindsey of Nourish Move Love.
I try not to overthink and over complicate fitness but rather live by the motto of “move your body in some way everyday.”
What do you do for fun?
I find that what brings me the most joy and what I like to do for fun are both low-key and so simple. Coffee or a walk with a friend, gardening in my backyard, going to a Farmers Market, visiting a winery, a simple family outing, sitting around a bonfire, and a trip to my cabin in northern Minnesota. I’m all for simple living.
Do you have any food allergies?
Thankfully, I do not.
