Ingredients

  • 2 medium delicata squash (1½ to 2 lbs total)
  • 1 tablespoon avocado oil or olive oil
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh thyme leaves

Instructions

  1. Preheat the oven to 400°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Using a large knife, cut both of the delicata squash in half lengthwise and use a spoon to scoop out the seeds. Cut the squash halves into ½-inch thick half-moon slices and place in a large bowl (NOTE: You do not need to peel the squash).
  4. Add squash slices to the baking sheet. Drizzle the oil over top and sprinkle with the salt, pepper, and thyme leaves.
  5. Toss the squash around to coat with the oil, salt, and pepper. Then spread out the squash pieces in a single layer. May place some fresh thyme sprigs over the squash, if desired.
  6. Bake for 20-25 minutes, stirring after 10 minutes of baking time, until the squash pieces are tender and lightly browned.
  7. Remove from the oven and serve.
