Ingredients
- Cooking spray
- ½ cup avocado oil or other neutral-tasting oil
- ¾ cup lightly packed brown sugar
- 1 large egg
- 1 cup canned pumpkin puree
- 1 teaspoon pure vanilla extract
- 1 ½ cups all-purpose flour (~212 g)*
- 1 tablespoon pumpkin pie spice
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon fine salt
- ½ cup semi-sweet chocolate chips*
Instructions
- Preheat the oven to 350°F. Mist a 9×13 baking dish with cooking spray; set aside.
- To a mixing bowl, add the avocado oil, brown sugar, egg, pumpkin puree, and vanilla. Whisk together well.
- Add the flour, pumpkin pie spice, baking powder, baking soda, and salt. Stir until just combined, then fold in the chocolate chips.
- Transfer the batter to the prepared baking dish, smoothing the batter out evenly. Sprinkle additional chocolate chips on top, if desired.
- Bake until a toothpick inserted into the center comes out clean, about 18-20 minutes.
- Remove from the oven and let the bars cool completely before cutting into 24 pieces.
Notes
* For gluten-free bars, sub 1:1 gluten-free baking flour blend for the all-purpose flour.
** For dairy-free bars, use dairy-free chocolate chips, such as Enjoy Life brand, or 100% dark chocolate chips.
Be sure to use pumpkin puree, not pumpkin pie filling, which has added sweetener.
