Crispy Parmesan Crusted Potatoes Recipe

Crispy potatoes have never tasted so good! These Parmesan Crusted Potatoes are oven roasted and baked to perfection. Buttery soft on the inside and perfectly crunchy on the outside.

Ingredients

  • Cooking spray
  • 1 ½ lbs honey gold or small Yukon gold potatoes, halved if large
  • 3 tablespoons butter, melted (may substitute 2 ½ tablespoons olive oil or avocado oil)
  • ¾ teaspoon salt (fine or sea salt)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried dill
  • ¼ teaspoon onion powder
  • ⅛ teaspoon black pepper
  • ½ cup shredded Parmesan cheese
  • Garnish: Fresh parsley or chives, flaky sea salt

Instructions

  1. Preheat oven to 400℉.
  2. Spray a 9×13-inch baking dish with cooking spray.
  3. Pour the melted butter into the baking dish.
  4. Add the garlic powder, dill, fine salt, onion powder, black pepper, and Parmesan to the dish with the butter.
  5. Add the potatoes to the dish and with your hands, toss the potatoes in the butter Parmesan mixture to coat well.
  6. Arrange the potatoes cut-side down in the baking dish.
  7. Place the baking dish in the oven and bake for 22 – 25 minutes or until the potatoes are golden brown and tender when pierced with a fork.
  8. Remove the baking dish from the oven and allow potatoes to cool for 5 minutes before transferring to a serving dish.
  9. Sprinkle with chopped fresh parsley or fresh chives and flaky sea salt, if desired. Serve with ranch or sour cream for dipping.
