Ingredients
- Cooking spray
- 1 ½ lbs honey gold or small Yukon gold potatoes, halved if large
- 3 tablespoons butter, melted (may substitute 2 ½ tablespoons olive oil or avocado oil)
- ¾ teaspoon salt (fine or sea salt)
- ½ teaspoon garlic powder
- ½ teaspoon dried dill
- ¼ teaspoon onion powder
- ⅛ teaspoon black pepper
- ½ cup shredded Parmesan cheese
- Garnish: Fresh parsley or chives, flaky sea salt
Instructions
- Preheat oven to 400℉.
- Spray a 9×13-inch baking dish with cooking spray.
- Pour the melted butter into the baking dish.
- Add the garlic powder, dill, fine salt, onion powder, black pepper, and Parmesan to the dish with the butter.
- Add the potatoes to the dish and with your hands, toss the potatoes in the butter Parmesan mixture to coat well.
- Arrange the potatoes cut-side down in the baking dish.
- Place the baking dish in the oven and bake for 22 – 25 minutes or until the potatoes are golden brown and tender when pierced with a fork.
- Remove the baking dish from the oven and allow potatoes to cool for 5 minutes before transferring to a serving dish.
- Sprinkle with chopped fresh parsley or fresh chives and flaky sea salt, if desired. Serve with ranch or sour cream for dipping.
