Ingredients

  • Cooking spray
  • 2 lbs lean ground beef
  • ½ cup bread crumbs*
  • 1 small yellow or white onion, diced (~½ cup)
  • 2 large eggs
  • 2 tablespoons Dijon mustard
  • 1 tablespoon coconut aminos* (may sub 1 teaspoon Worcestershire sauce)
  • 2 teaspoon garlic powder
  • 1 teaspoon fine salt
  • ¼ – ½ teaspoon ground black pepper
  • ⅓ cup unsweetened ketchup*
  • Optional garnish: finely chopped fresh parsley

Instructions

  1. Preheat the oven to 375℉ and lightly mist a 9×5-inch loaf pan with cooking spray; set aside.
  2. In a medium bowl, combine the ground beef, bread crumbs, diced onion, eggs, mustard, coconut aminos, garlic powder, salt, and pepper until well combined. Mix by hand or with a wooden spoon just until the ingredients are incorporated (NOTE: Avoid overmixing the meatloaf mixture since that could make the meatloaf too dense.)
  3. Transfer the meatloaf mixture to the prepared loaf pan and gently press into an even layer.
  4. Spread the ketchup over the top of the meatloaf mixture in an even layer.
  5. Bake until an instant read thermometer inserted into the center of the meatloaf reads 160℉, about 1 hour.
  6. Remove the meatloaf from the oven and carefully pour any excess fat from the pan to discard.
  7. Let the meatloaf rest for 5 minutes before slicing and serving.
  8. Store leftovers in an airtight container in the refrigerator for up to 4 days.
