Zucchini lasagna recipe

- ground beef - Italian seasoning - salt  -  black pepper - extra-virgin olive oil - zucchini - mushrooms - yellow onion - garlic cloves - fresh spinach - basil leaves - marinara sauce - balsamic vinegar - mozzarella cheese - cottage cheese - shredded Parmesan cheese - salt & pepper

INGREDIENTS

In a skillet, add ground beef, Italian seasoning, salt and pepper. Cook, breaking into smaller pieces. Remove from skillet to a plate.

STEP 1:

In the same skillet, add the zucchini, mushrooms, onion, garlic, and salt and pepper. Sauté until onions are translucent, 7-9 minutes.

STEP 2:

Stir in the spinach and basil; sauté for another 2 minutes. Stir in marinara sauce, balsamic vinegar, cooked beef, and mozzarella cheese.

STEP 3:

Dollop cottage cheese evenly over top. Let cook on low simmer, uncovered, for 10 minutes.

STEP 4:

Top with remaining mozzarella cheese and Parmesan. Cover and cook 3-5 minutes. Optional: broil for 2 minutes.

STEP 5:

Serve the Zucchini Lasagna dinner after it's rested for 10 minutes. Serve with a side salad of choice.
