Street corn  pasta salad

For the Salad: - rotini or bowtie pasta - fresh corn, cut from cobs - fresh cilantro - avocado - red onion = Cotija cheese

INGREDIENTS

For the Dressing: - siggi's whole milk plain yogurt - mayonnaise - zest and juice of limes - chili powder - salt & pepper

INGREDIENTS

Cook the pasta according to package. Drain then place in refrigerator to cool.

STEP 1:

Add corn kernels to pan and cook for 5-6 minutes or until corn starts to char. Remove from skillet and let cool.

STEP 2:

Make the dressing by combining all dressing ingredients in a small bowl. Whisk until smooth.

STEP 3:

To the bowl of cooked and cooled pasta, add the remaining salad ingredients. Pour dressing over top and gently stir together.

STEP 4:

Sprinkle with additional cotija cheese, chopped cilantro, and dusting of chili powder. Serve chilled.
