slow cooker thai-inspired peanut chicken

+ boneless, skinless chicken breast or thighs + yellow onion + red bell pepper + sea salt + black pepper + fresh. baby spinach + limes

INGREDIENTS

+ garlic cloves + canned coconut milk + creamy peanut butter + coconut aminos + rice vinegar + honey + toasted sesame oil + fish sauce (optional) + grated fresh ginger + crushed red pepper flakes

PEANUT SAUCE:

Place the chicken pieces, diced onion and red bell pepper in slow cooker. Sprinkle with salt & pepper. Pour peanut sauce over chicken.

STEP 1:

Cook on low for 4-4 1/2 hours.  Add baby spinach and stir in. Let cook for 2-4 more minutes until spinach wilts.

STEP 2:

Serve over rice, cauliflower rice, or pad Thai noodles as pictured. Garnish with cilantro and chopped peanuts if desired.
