SKILLET ZUCCHINI LASAGNA

GLUTEN-FREE

+ ground beef + Italian seasoning + salt & pepper + olive oil + zucchini + mushrooms + yellow onion + garlic + spinach + fresh basil + marinara sauce + balsamic vinegar + mozzarella cheese + cottage cheese + Parmesan cheese

INGREDIENTS

In a skillet, add ground beef, Italian seasoning, salt & pepper. Cook over medium-high heat until cooked through. Remove from skillet.

STEP 1:

Add olive oil to skillet. Once hot add zucchini, mushrooms, onion, garlic, and salt & pepper. Sauté 7-9 minutes.

STEP 2:

Stir in spinach and basil, sauté another 2 minutes. Add the marinara sauce, balsamic vinegar, beef, and 1/2 cup mozzarella cheese.

STEP 3:

Next dollop cottage cheese evenly over top. Let cook on low simmer for about 10 minutes. 

STEP 4:

Top with remaining mozzarella and Parmesan. Cover skillet and cook another 3-5 minutes or until cheese has melted.

STEP 5:
