+ balsamic vinegar + avocado oil + garlic + dijon mustard + fresh basil + salt & pepper + chicken breasts or thighs + broccoli + carrots + mushrooms + red onion + cherry tomatoes
Combine the marinade ingredients. Place half the balsamic marinade in a zip-top bag with the chicken. Marinade up to 24 hours.
Prep all vegetables and place on sheet pan. Pour remaining marinade over veggies and toss. Add the chicken to the sheet pan.
Bake in 400 degree oven 20-25 minutes or until chicken reaches internal temperature of 165 degrees.
Remove from the oven, top with additional chopped fresh basil then serve.
Can divide evenly between containers for meal prepped lunches or dinners.
