One-pan shrimp fajita bowls

+ raw shrimp + bell peppers + yellow onion + avocado oil + chili powder + smoked paprika + garlic powder + cumin + salt & pepper + riced cauliflower + Habanero Ranch Dressing

INGREDIENTS

Sprinkle the seasonings over the sliced peppers and onions with one tablespoon avocado oil. Toss to evenly coat.

STEP 1:

Arrange the peppers and onions on one end of a sheet pan. On the other end, add the riced cauliflower.

STEP 2:

Bake for 15 minutes, remove pan from the oven, add raw shrimp to the center of the pan, sprinkle with remaining seasoning.

STEP 3:

Return to the oven and bake an additional 10 minutes. Season riced cauliflower with salt and pepper to taste.

STEP 4:

To serve, divide cauliflower rice among 4 serving bowls. Top with pepper and onion mixture and shrimp. Drizzle with habanero ranch dressing.
