lamb curry (Instant Pot)

- olive oil - lamb stew meat - yellow onion - carrots - diced tomatoes, canned - garlic cloves - fresh ginger - curry powder - baby Yukon gold potatoes - full-fat coconut milk - zucchini - lime - cilantro - cooked rice or cauliflower rice

INGREDIENTS

Select 'Saute' on the Instant Pot. Add oil and lamb meat. Cook for 2 minutes. Stir, cook another 2 minutes. Remove meat, continue until all lamb is browned.

STEP 1:

Remove meat from Instant Pot. Add onions, carrots, drained diced tomatoes. Saute for 3-4 minutes.

STEP 2:

Add garlic, ginger, curry powder, salt & pepper. Saute 1 minute more. Add lamb back in along with potatoes, reserved tomato juice and coconut milk.

STEP 3:

Lock lid in place, set valve to seal, cook for 14 minutes. Use quick release, open lid, select saute, add zucchini and lime juice. Cook for 5-6 minutes.

STEP 4:

Let cool for 5-10 minutes before ladling into bowls over rice or cauliflower rice. Sprinkle with fresh cilantro if desired.

STEP 5:
