Raspberry French Toast Casserole

Instant Pot

– stale or toasted gluten-free bread –organic raspberries – eggs – milk or non-dairy milk of choice – ground cinnamon

Add 2 cups of water to the Instant Pot and select the ‘Saute’ feature to warm the water.

Place a greased 1 ½ – 2 quart round baking dish with bread cubes and raspberries on a handled rack insert inside the pot.

Whisk together eggs, milk, maple syrup, vanilla, cinnamon, and cardamom, pour over the bread mixture.

Cover with foil, and cook on 'Manual' for 17 minutes; after quick release, broil the dish with a sugar topping until browned.

Serve with additional berries, syrup, and yogurt or whipped cream if desired.
