Cream together the eggs and sugar. Add the applesauce, milk, and vanilla. Whisk. Add the flour, baking soda, baking powder, and all spices.
Fold in the shredded carrots, raisins, and walnuts.
Pour the batter into a sprayed 8x8 or 9x9 baking dish. Bake for 25-30 minutes.
Remove from oven and let cool completely.

For a dairy-free option, use a non-dairy milk in the batter and use a dairy-free cream cheese and plant-based butter in the frosting.
