gluten-free HEALTHY carrot cake bars

dairy-free option!

+ eggs + sugar + milk of choice + applesauce + vanilla + gluten-free flour + baking soda + baking powder + ground cinnamon + allspice + cloves + fine salt + dark raisins + shredded carrots + chopped walnuts

INGREDIENTS

Cream together the eggs and sugar. Add the applesauce, milk, and vanilla. Whisk. Add the flour, baking soda, baking powder, and all spices.

STEP 1:

Fold in the shredded carrots, raisins, and walnuts. 

STEP 2:

Pour the batter into a sprayed 8x8 or 9x9 baking dish. Bake for 25-30 minutes.

STEP 3:

Remove from oven and let cool completely.

STEP 4:

Whip together the frosting ingredients: + cream cheese + unsalted butter + vanilla + powdered sugar + milk of choice

STEP 5:

For a dairy-free option, use a non-dairy milk in the batter and use a dairy-free cream cheese and plant-based butter in the frosting.
