CREAMY CROCKPOT BUTTER CHICKEN

EASY WEEKNIGHT DINNER

yellow onion boneless, skinless chicken breast red bell pepper carrots tomato sauce tomato paste juice of lemon garlic cloves fresh ginger curry powder garam masala salt salted butter Greek yogurt or Skyr half-and-half

INGREDIENTS

In the crock of a slow cooker, place the sliced onions. In a large bowl combine the chicken, bell pepper, carrots, tomatoes sauce, tomato paste, lemon juice, garlic, ginger, curry powder, garam masala, and salt. 

STEP 1:

Add the saucy chicken mixture to the slow cooker over top of sliced onions. Dot the pieces of butter over top of mixture.

STEP 2:

Place lid on slow cooker and cook on high for 4 1/2 hours or on low for 6 1/2 hours. 

STEP 3:

After time is up, remove lid, stir all ingredients. Turn slow cooker off, let sit until liquid stops simmering. Stir in yogurt and half-and-half.

STEP 4:

Serve over hot cooked rice or cauliflower rice and/or with naan bread. Garnish with fresh cilantro and sesame seeds
