Prepare the squash by slicing, deseeding, and baking it cut-side down for 30-40 minutes.

While the squash bakes, cook the chicken either in an Instant Pot with water or broth  or on the stovetop in a skillet with oil and water.

Once both the squash and chicken are cooked, mix the squash shreds, shredded chicken, celery, green onions, bell pepper, and buffalo sauce in a bowl.

Stuff the mixture back into the squash shells and bake. Serve with ranch dressing and crumbled blue cheese.
