For the Chicken Meatballs: - ground chicken - minced red onion - garlic cloves - lemon zest - fresh dill - dried oregano - fine salt - black pepper

INGREDIENTS

For the Greek Bowls: - Persian (mini) cucumbers - grape tomatoes - red onion - kalamata olives - fresh mint - extra-virgin olive oil - red wine vinegar - fine salt & black pepper - romaine lettuce - cooked rice (or cauliflower rice) - feta cheese - Tzatziki dip - lemon wedges

INGREDIENTS

In a medium bowl combine the ground chicken, red onion, garlic, lemon zest, dill, oregano, salt and pepper. Stir well to combine.

STEP 1:

Roll into 16 equal meatballs. Cook in a skillet, in air fryer, or bake in oven (instructions for all 3 ways on website).

STEP 2:

To a medium bowl, add the cucumbers, tomatoes, onion, olives and mint. Coat evenly with olive oil, red wine vinegar, salt & pepper.

STEP 3:

To each of 4 serving bowls, place handful lettuce, 3/4 cup rice, 1/3 cup tomato-cucumber salad, 4 cooked chicken meatballs.

STEP 4:

Sprinkle with feta cheese and top with 2 tablespoons Tzatziki sauce. Garnish withe lemon wedges.
