+ ground beef + onion + bell pepper + zucchini + garlic + taco seasoning + fire-roasted tomatoes + tomato paste + beef broth + frozen corn + black beans + white rice + shredded cheddar cheese

INGREDIENTS

In a skillet, brown the ground beef. Add the onion, bell pepper, zucchini, garlic, and taco seasoning. Cook until beef is browned and veggies have softened.

STEP 1:

Add to a baking dish with the fire-roasted tomatoes, tomato paste, beef broth, drained beans, corn, rice and 1/2 cup shredded cheese.

STEP 2:

Cover with foil and bake for 50-65 minutes or until the rice is tender. Remove the foil, sprinkle with remaining cheese and bake for 5-10 minutes or until cheese is bubbly.

STEP 3:

Serve with your favorite toppings! - salsa - diced avocado - sour cream - fresh cilantro - lime wedges
