For the Ground Turkey Sausage: - dried Italian seasoning - dried oregano - garlic powder - fennel seeds - fine salt - black pepper - red pepper flakes - avocado oil - ground turkey - yellow onion - garlic cloves

For the Soup: -small red or Yukon Gold potatoes - button or cremini mushrooms - chicken broth - fresh kale - half-and-half - cornstarch - grated or shredded Parmesan cheese for serving

INGREDIENTS

In a bowl, mix together all seasonings for turkey sausage. In large skillet, heat oil, add ground turkey.

STEP 1:

Using a spatula to break up turkey as it cooks. Add seasoning, onions and garlic. Cook until turkey is cooked through.

STEP 2:

Transfer cooked turkey to slow cooker. Add potatoes, mushrooms, and chicken broth. Stir together.

STEP 3:

Place lid on slow cooker and cook for 6 hours on LOW or 3 hours on HIGH.

STEP 4:

Whisk together the cornstarch and half-and-half. Add to slow cooker, replace lid, and cook for 30 minutes to thicken. Then add the kale and cook another 30 minutes.

STEP 5:
