Tater Tot Casserole

- avocado oil - yellow onion - lean ground beef - mushrooms - all-purpose flour - chicken broth - fine salt & pepper - garlic powder - onion powder - cooked lentils - frozen mixed vegetables - cauliflower rice - cheddar cheese - frozen tater tots

INGREDIENTS

In a skillet over medium-high heat, add oil and onions. Saute for 2 mintues then add ground beef. Cook for 8-10 minutes.

STEP 1:

Add cooked ground beef to casserole dish. To the same skillet, add oil and mushrooms. Cook for 2 minutes, sprinkle with flour.

STEP 2:

Slowly add broth one cup at a time, whisking constantly. Simmer for 5 minutes. Add seasonings. Pour mushroom mixture into casserole dish.

STEP 3:

Add the cooked lentils, vegetables, cauliflower rice and cheese to casserole dish. Stir well. Top with tater tots. Sprinkle with cheese.

STEP 4:

Bake for 35-40 minutes or until bubbly and the tater tots are golden brown. Remove from oven and let cool for 5 minutes.
