Taco Stuffed Bell Peppers

- bell peppers, any color - olive oil - yellow onion - zucchini - garlic cloves - lean ground beef - taco seasoning - salsa of choice - frozen cauliflower rice - shredded cheddar cheese

INGREDIENTS

Prep the bell peppers. Cut in half, remove seeds. Place in sprayed baking dish, cur side up. Bake for 15 minutes.

STEP 1:

Heat skillet over medium heat. Add oil, onion, and zucchini. Cook for 4-5 minutes.

STEP 2:

Increase heat, add garlic, ground beef and taco seasoning. Cook for 8-10 minutes, breaking into pieces, until cooked through.

STEP 3:

Stir in salsa and frozen cauliflower. Cover and cook additional 7-8 minutes. Remove from heat, stir in cheese.

STEP 4:

Fill each partially baked bell pepper with beef mixture. Sprinkle with additional cheddar cheese. Bake for 8-10 minutes until cheese is melted.

STEP 5:

Our stuffed peppers recipe uses taco seasoning in place of traditional Italian herbs and spices. A great way to switch up taco night!
