Sweet Potato Brussels Sprouts Carrots Celery Ribs Mushrooms Yellow Onion Garlic Cloves Apple Fresh Thyme Fresh Rosemary Chili Powder Sea Salt Avocado Oil Dried Cherries or Cranberries Chopped Pecans
Combine all ingredients except dried cherries/cranberries and pecans in a large baking dish.
Toss with oil, cover with foil and bake for 20 minutes.
Remove from oven, remove foil and add the dried cherries and pecans, toss together and bake for an additional 20-25 minutes.
Remove from oven and serve.
ProTip: Chop all ingredients the day before serving. You may also bake this dish ahead of time and keep warm in a slow cooker set on low.
