- pineapple chunks - ketchup - rice vinegar or acv - coconut aminos - garlic powder ground ginger - cornstarch or arrowroot starch - chicken breasts - salt & pepper - avocado oil - bell peppers - yellow onion - carrots

INGREDIENTS

In a bowl, whisk together the pineapple juice, ketchup, vinegar, coconut aminos, garlic powder and ground ginger. Whisk in cornstarch.

STEP 1:

In another bowl, combine the chicken pieces and toss with salt and pepper.

STEP 2:

Place skillet over medium-high heat. Add oil and chicken. Cook for 2-3 minutes, flip and cook until browned and cooked through.

STEP 3:

Transfer chicken to plate. Add oil to skillet. Add onions and carrots, cook for 4 minutes. Add bell peppers cook another 4-5 minutes.

STEP 4:

Return chicken to skillet and add pineapple chunks. Stir in sweet and sour sauce. Cook, stirring frequently until sauce thickens.

STEP 5:
