Combine lemon zest and juice, orange, date, garlic, avocado oil, salt, and dried thyme in food processor. Blend until emulsified. Set in fridge.
Place shredded Brussels sprouts in large bowl. Add shallots, bacon, and chopped dates. Toss together.
Pour dressing over salad and toss again. Add almonds just before serving and toss well to combine.
This slaw will keep for 2-3 days in the fridge!
