Spaghetti Squash Chicken Alfredo

SPAGHETTI SQUASH CHICKEN: - spaghetti squash - chicken thighs or breast ALFREDO SAUCE: - raw cashews - boiling water - nutritional yeast - garlic cloves - lemon juice - fine salt - unsweetened almond milk - fresh basil

INGREDIENTS

Place cashews in bowl, cover with boiling water. Let rest for 30 minutes.

STEP 1:

Place halved squash on parchment-lined baking sheet. Place chicken thighs on another baking sheet, sprinkle with salt & pepper.

STEP 2:

Bake for 25-30 minutes or until internal temperature of chicken is 165°F. Bake squash additional 20-25 minutes or until tender.

STEP 3:

Drain cashews, place in blender with rest of alfredo sauce ingredients. Blend on high for 2 minutes.

STEP 4:

To a skillet, add the spaghetti squash strands, diced chicken, and Alfredo sauce. Place skillet on stove top and heat for 5-6 minutes.

STEP 5:

Stir chopped basil into spaghetti squash mixture just before serving. Top with additional basil, as desired.
