For the Peanut Sauce: + garlic cloves + canned coconut milk + creamy peanut butter + coconut aminos + rice vinegar + honey + toasted sesame oil + fish sauce (optional) + fresh ginger + crushed red pepper flakes
Mix up the peanut sauce. Place the chicken pieces, onion, and red pepper in crockpot. Season with salt and pepper then pour peanut sauce over the top.
Slow cook for 4 - 4 1/2 hours or until chicken is cooked through. Add spinach leaves and lime juice, stir, allow a few more minutes to cook, then serve.
