For the BBQ Beef: - boneless beef chuck roast - avocado oil - yellow onion - tomato paste - Dijon mustard - apple cider vinegar - water - garlic powder - dried oregano - chili powder - smoked paprika - salt & pepper

INGREDIENTS

For the Coleslaw: - bag coleslaw mix - mayonnaise - apple cider vinegar - garlic powder - salt & pepper

INGREDIENTS

Place onions on bottom of slow cooker. Cut beef roast into 3 chunks. Heat oil in Dutch oven or skillet, Add beef and sear for 4-5 minutes on each side.

STEP 1:

Transfer meat to slow cooker, placing over the onions.

STEP 2:

In a bowl, combine tomato paste, mustard, vinegar, water, garlic powder, oregano, chili powder, paprika, salt & pepper. Stir well then pour over beef.

STEP 2:

Place lid on slow cooker, cook on LOW for 8-10 hours or until meat is tender and shreds easily.

STEP 4:

For coleslaw: Whisk together mayonnaise, apple cider vinegar, and garlic powder. Pour over coleslaw mix and toss together.

STEP 5:
