EASY BEEF SKILLET ENCHILADAS

- olive oil - ground beef - red bell pepper - zucchini - green onions - chili power, cumin, garlic powder, dried oregano - canned red enchilada sauce - black beans - frozen corn - corn tortillas - shredded Mexican blend cheese

INGREDIENTS

Preheat oven to 425°F. In large oven-safe skillet over medium-high heat add oil, ground beef, bell pepper, zucchini and green onions. Break into pieces and cook.

STEP 1:

Turn heat off. Add seasonings, enchilada sauce, black beans, corn and 1/2 cup cheese. Stir to combine.

STEP 2:

Gently fold in corn tortilla wedges so they're well coated with sauce. Sprinkle with remaining cheese.

STEP 3:

Bake until the cheese is melted and bubbly, about 10-15 minutes. Remove from oven and top with favorite toppings.

STEP 4:
