+ chicken thighs + cauliflower + zucchini + red onion + bell pepper + grape tomatoes + garlic + lemon + oregano, basil, garlic powder, onion powder, salt & pepper + olive oil + kalamata olives + feta cheese (optional) + spinach
Mix together juice from 1/2 lemon, olive oil, and spices.
Place all the veggies on a baking sheet. Toss with half the herbed olive oil mixture. Place chicken thighs on top of the veggies and rub with remaining herbed mixture.
Nestle two lemon halves, cut side up, into the veggies. Drizzle with additional olive oil. Bake for 25-30 minutes.
Make the Tahini-Lemon Dressing: + tahini + warm water + lemon + salt to taste
Sprinkle the olives, parsley, and feta over the veggies and chicken. Serve over greens with the Tahini Sauce drizzled over the top.
