- chicken thighs - whole carrots - green beans - baby red potatoes - red onion - garlic cloves - fresh rosemary - fresh thyme - olive oil - salt & pepper
Preheat the oven to 425ºF. Line a large rimmed, baking sheet with parchment paper.
Toss the chopped vegetables and herbs with oil directly on the baking sheet. Place the chicken thighs on top of the vegetables.
Season chicken and veggies with salt and pepper. Bake until the chicken is cooked through and potatoes are tender, about 30-35 minutes.
Once chicken has reached internal temperature of 165°F, remove sheet pan from oven and serve the chicken and veggies.
