Balsamic Chicken Veggie Bake

Sheet Pan

– Chicken breast – Fresh broccoli  – Carrots  – Button mushrooms  – Red onion – Cherry or grape tomatoes – Balsamic vinegar

Whisk together balsamic vinegar, oil, garlic, basil, mustard, salt, and pepper to make a sauce. Marinate the chicken with half of the sauce in the fridge.

Chop broccoli, carrots, mushrooms, and onion. Toss the veggies (except tomatoes) with the remaining sauce and place on the sheet pan.

Add the marinated chicken to the pan, discarding the marinade and bake then add tomatoes and veggies.

Bake until the chicken is cooked through (165℉). Top with fresh basil and serve.
