SAUSAGE EGG BAKE (EASY OVERNIGHT)

dairy-free option!

+ frozen shredded hash browns + butter (or avocado oil) + ground turkey or pork breakfast sausage + red bell pepper + green bell pepper + green onion + eggs + shredded cheddar + milk of choice + Greek yogurt + salt & pepper

INGREDIENTS

Add hash browns to bottom of casserole dish. Add melted butter, toss to coat. Bake for 35-40 minutes.

STEP 1:

Brown the ground sausage, peppers, and onion. Add to top of baked hash browns.

STEP 2:

Whisk together the eggs, cheese, milk, yogurt, salt and pepper. Pour over layer of sausage. Bake for additional 35-45 minutes.

STEP 3:

Bake time will vary slightly. Once done, remove from oven, cut into 12 equal pieces. 

STEP 4:

For dairy-free option use non-dairy cheese, milk, and additional non-dairy milk in place of the yogurt. 

STEP 5:

This breakfast casserole makes for the perfect breakfast, brunch, or even dinner recipe! Pair with a side salad and fresh berries for a balanced meal!
