PUMPKIN PASTA WITH SAUSAGE

For the Pasta and Sausage: - uncooked linguine - ground turkey - fresh sage - garlic powder - Italian seasoning - dried fennel, crushed - fine salt & pepper - red pepper flakes

INGREDIENTS

For the Sauce: - butter - olive oil - garlic cloves - fresh sage leaves - all-purpose flour (GF if needed) - whole milk - canned pumpkin puree - tomato paste - Italian seasoning - onion powder - salt & pepper - nutmeg - fresh spinach - Parmeasn cheese

INGREDIENTS

Cook pasta according to package, reserve 1/4 cup pasta water for later. Drain the pasta and set aside.

STEP 1:

In a skillet over medium-high heat, add ground turkey and seasonings. Break into pieces and cooke through, about 7 minutes.

STEP 2:

Remove turkey from skillet. Add oil, butter, garlic and sage; cooke for 2-3 minutes. Add flour, cook for 2 minutes.

STEP 3:

Increase heat and slowly whisk in milk. Cook and whisk for 3-4 minutes until mixture thickens.

STEP 4:

Whisk in pumpkin puree, tomato paste, and seasonings. Add spinach and reserved pasta water. Cook until spinach wilts.

STEP 5:

Stir in cooked turkey and Parmesan cheese. Add cooked pasta and toss with sauce. Ready to serve.
