- 6 whole lemons - 1/2-1 cup fine sea salt or Kosher salt - Fresh lemon juice

INGREDIENTS

Using a knife, trim ¼ inch from each end of 4 lemons, reserving the other 2 for Step 10.

STEP 1:

Stand the lemon up on one end and, using a paring knife, cut the lemon in half, stopping just before cutting all the way through. Turn the lemon and make another cut.

STEP 2:

Place the lemons in a medium bowl and sprinkle with ½ cup salt. Rub the salt into the inside and outside surfaces of the lemons.

STEP 3:

Remove and discard any seeds. Transfer the salted lemons and the salt to a clean one-quart glass jar.

STEP 4:

Using a tamper, press lemons firmly into the jar so that juice releases from fruit and mixes with salt to create a brine.

STEP 5:

Sprinkle 2 tablespoons salt over surface, add fresh lemon juice to jar. Add weight to jar (create with zip-lock bag if needed).

STEP 6:

Place lid very loosely on jar. Keep at room temperature, out of sunlight for 21 days. Then store in fridge for up to 12 months.
