+ natural creamy peanut butter + coconut oil + honey (maple syrup for vegan) + vanilla  + old-fashioned oats + shredded coconut + ground flax meal  + chia seeds + salt + mini chocolate chips

INGREDIENTS

In a small saucepan over low heat, melt the coconut oil, peanut butter, honey, and vanilla. Add the cooled peanut butter mixture to the dry ingredients and stir.

STEP 1:

Add the mini chocolate chips and stir into the mixture.

STEP 2:

Roll the dough into 26-28 small round bites. Place on a parchment-lined baking sheet.

STEP 3:

Serve the oatmeal balls or place in an airtight container in the refrigerator for up to one week.

STEP 4:

To freeze, place in a freezer-friendly container and freeze for up to 3 months.
