-1 cup creamy peanut butter -2 Tbsp. coconut oil or butter -3 Tbsp. honey (or maple syrup for vegan) -1 tsp. vanilla -2¼ cups old-fashioned oats (gluten-free if needed) -1/4 cup unsweetened shredded coconut -1/4 cup ground flaxseed -1 Tbsp. chia seeds -Pinch of fine salt -1/3 cup mini chocolate chips
Optional step - for a smoother texture, pulse the oats 10-15 times in a food processor. Then in a mixing bowl combine the oats, coconut, flax, chia and salt.
Stir, set aside. In a small pan over low medium heat, add the peanut butter, coconut oil or butter, honey, and vanilla. Heat just until everything is combined, stirring often.
Add the cooled peanut butter mixture and chocolate chips to the dry ingredients, mix until well combined. Roll into 26-28 balls. Enjoy!
