Step 1: Add the nuts and coconut flakes to a food processor and process until well chopped. Tip: do not over process.
Step 2: Make the honey cinnamon sauce in a large saucepan. For vegan-friendly, use maple syrup.
Step 3: Add all of the ingredients (except dried cranberries) to the saucepan and stir to combine well. Spread out onto a pan and bake in the oven.
Step 4: After baking, gently press the cranberries into the granola. Allow granola to cool before breaking up.
