+ boneless pork chops + delicata squash + poblano pepper + olive oil + smoked paprika + garlic powder + salt + ground black pepper + fresh cilantro (garnish) + toasted squash seeds
Delicata squash is simliar to butternut or acorn. With thin and tender skin and a sweet & buttery flavor, it's a great winter squash to try.
WHAT IS DELICATA SQUASH?
Cut the squash in half lengthwise and use a spoon to scoop out the seeds (save them!). Cut the squash halves into 1/2-inch thick half-moon slices.
Rinse the seeds in a colander then pat dry. Toss with oil and salt. Spread onto a baking sheet.
HOW TO TOAST SQUASH SEEDS
Bake for about 10 minutes or until lightly golden brown on the edges.
BAKED TO PERFECTION!
Cut the poblano peppers into strips. Whisk together the oil and spices. Coat the pork chops then arrange on a baking sheet along with the squash and peppers.
PUTTING IT ALL TOGETHER
To serve, divide pork chops, squash, and peppers among plates. Sprinkle squash with a pinch of salt and garnish with cilantro and toasted squash seeds.
THE FINISHING TOUCHES
This delicious cut of pork, whether bone-in or boneless, comes from the meat that runs from the pig’s hip to its shoulder. It's tender and juicy and a great source of protein.
