For the Baked Nuggets: – 1 1/2 cups crushed tortilla chips – 1 ½ tsp garlic powder – ½ tsp onion powder – ¼ tsp paprika – ½ tsp fine salt – ¼ tsp black pepper – 1 ½ pound chicken breasts, 1-inch cubes – 2 tbsp avocado oil or olive oil – Cooking spray For the Honey-Mustard Dipping Sauce: – ½ cup mayonnaise – ¼ cup dijon mustard – 2 tbsp honey – ½ tsp fine salt – ¼ tsp dried thyme – ¼ tsp black pepper
Combine the breading ingredients. Place in a large rimmed dish. Toss chicken in oil then place chicken in the dish and toss to coat well, firmly pressing the breading into the chicken.
Place chicken on a baking sheet and bake in oven set at 450℉ for about 20 minutes flipping halfway through.
Meanwhile, whisk together all of the dipping sauce ingredients in a bowl.
Remove baked nuggets from the oven and serve with Honey-Mustard Dipping Sauce or other sauce for dunking.
